Semolina halawa (semidiyeh) topped with clotted cream — somewhat like Lebanese "Layali Lubnan".
Ingredients
- 1 cup coarse semolina
- 6 cups milk
- 1 cup sugar
- 1 tablespoon rose water and 1 tablespoon orange blossom water
- 1 can Nestlé clotted cream (qeemar) or 1 cup homemade clotted cream
- Sugar syrup (qatar/shira)
- Pistachios, almonds, and raisins soaked in cold water, for garnish
Method
- In a saucepan, dissolve the semolina in the milk, then place the mixture over low heat and stir constantly.
- Once it comes to a boil, add the sugar and continue stirring for two minutes.
- Add the rose water and orange blossom water after the mixture has thickened.
- Stir and remove immediately from the heat.
- Pour the semolina dessert directly into a wide serving dish.
- Let it cool to room temperature.
- Spread the chilled clotted cream on top and garnish with the drained raisins and nuts.
- You can refrigerate it to chill well before serving.
- Serve with sugar syrup (qatar).
