Chickpea fatteh with yogurt and minced meat on top ... mmm, nothing better for breakfast or lunch
Ingredients
- 2 cups chickpeas, soaked overnight in water
- or
- 2 cups cooked canned chickpeas
- a pinch of cumin
- a pinch of salt
- 200 grams finely minced meat
- a pinch of cinnamon for the meat
- half a kilo yogurt
- a clove of garlic
- one Arabic flatbread
- 1 tablespoon tahini
- lemon juice
- paprika or a pinch of sumac
- chopped parsley for garnish
- fried nuts cooked in butter (a generous amount) for topping
Method
- After soaking the chickpeas overnight, wash them and cover them with water in a pot and boil until tender. If using canned chickpeas, put them in a pot with enough water to cover, bring to a boil, and heat through
- Sprinkle the chickpeas with a little cumin and salt, then turn off the heat
- Fry the minced meat in a little oil
- Season with salt and cinnamon and stir until cooked through
- Fry the Arabic bread, cut into cubes, in plenty of oil, then drain
- In a bowl, crush the garlic with a pinch of salt. Add the yogurt, then the lemon juice and tahini, and whisk well until the mixture is smooth and combined
- Spread the fried bread in the bottom of a pyrex dish or serving platter... drain the chickpeas and spread them over the bread, then add the minced meat, and finally the yogurt mixture
- Garnish the top with a few chickpeas and sprinkle with paprika or sumac and chopped parsley..
- Finally, pour the butter and nuts on top and serve the fatteh immediately before the bread absorbs too much of the liquid
