Ingredients

  • 3 cups sifted all-purpose flour (adjust as needed depending on flour type)
  • 1 cup sugar
  • 1 tsp baking powder
  • 1/2 cup olive oil
  • 1 tsp vanilla extract
  • Zest of an orange
  • 1/2 cup orange juice

Method

  1. Whisk the orange juice with the oil, orange zest, vanilla, and sugar.
  2. When the sugar dissolves, add the flour and baking powder and knead until you obtain a smooth dough.
  3. Let it rest for 10 minutes.
  4. Shape the orange cookie dough into rounds or fingers according to preference.
  5. Bake the cookies in a preheated oven at 180°C for a maximum of 12 minutes.
  6. As soon as the cookies take some color on the bottom, switch on the top oven heat so they color on top as well; do not leave the orange cookies in the oven for long so they do not become hard.
  7. Remove the cookies from the oven after baking; they will be slightly crisp—set them aside to cool slightly before serving.
