Eclairs with crème pâtissière — one of the lightest and most delicious pastries, best made at home

Melted chocolate (for topping) Choux pastry (pâte à choux): 2 cups water 2 cups flour 150 g butter 6 eggs A pinch of salt A splash of vanilla

Place the water in a saucepan with a pinch of salt and vanilla.
When it boils, add the flour and stir quickly, cooking for about 5 minutes until the dough pulls away from the pan.
Turn off the heat and let the dough cool slightly before adding the eggs one at a time, beating well after each addition until you obtain a smooth, sticky dough.
Pipe the choux dough into long eclair shapes using a piping bag.
Bake the eclairs in a hot oven for 10 minutes, then reduce the temperature to 180°C (356°F). Do not open the oven door during baking.
Let them bake for about 15–20 minutes, then turn off the oven and let them rest inside for about 10 minutes — this is essential to prevent the eclairs from collapsing.
Let the eclairs cool completely to room temperature before filling.

Crème pâtissière (pastry cream): 2 egg yolks 3 tbsp sugar 2 tbsp cornstarch 1 cup milk

Heat the cup of milk in a saucepan.
In a bowl whisk the egg yolks, sugar and cornstarch together.
When the milk is hot, add a little of it to the egg mixture while whisking quickly to temper the eggs.
Pour the tempered egg mixture back into the saucepan with the hot milk and whisk constantly. When the mixture thickens slightly, remove from the heat and transfer to a bowl. Cover the surface with plastic wrap touching the cream to prevent a skin from forming and let it cool.
When the pastry cream has cooled, slice the eclairs lengthwise or make a small side incision and fill them using a piping bag.
Dip the top of each eclair in melted chocolate (using a bain-marie) and refrigerate the eclairs until serving. Serve chilled.
