Ingredients

  • 5 cups flour
  • 1 1/2 tablespoons yeast
  • 2 tablespoons sugar
  • 2 tablespoons powdered milk (you can omit the powdered milk and instead add 1/2 cup warm water with 1/2 cup warm milk)
  • 1 cup warm water
  • 1/2 cup vegetable oil
  • 1/2 cup yogurt
  • 1 tablespoon salt
  • Ingredients and Method for Meat Manakish Filling:
  • 250 g meat
  • 250 g finely chopped onion
  • 600 g chopped tomatoes
  • 1 tablespoon tomato paste
  • 1 tablespoon tahini
  • 1 tablespoon ground coriander
  • 1 tablespoon mixed spice
  • Hot pepper or chili flakes - optional
  • Salt

Method

  1. We first start by mixing the yeast with the warm water, sugar, and powdered milk.
  2. Cover the yeast and let it activate for about 5 minutes.
    Timers: 5 min
  3. Add the oil, yogurt, and the remaining ingredients, then mix everything together. Add the flour and knead the manakish dough well until you get a soft dough.
  4. Shape the manakish dough into 12 balls, each weighing about 100 grams. Cover the dough balls and let them rise for about 1 hour.
    Timers: 60 min
  5. On a work surface, roll out each dough ball and prick it with a fork.
  6. Place a pan over the heat. Once it is hot, place the dough in it and add the filling: za'atar, cheese, or meat topping, حسب الرغبة والمتوفر.
  7. When the manakish are cooked over high heat and lightly browned, place them on a clean kitchen towel and cover them so they stay soft.
  8. Mix all the ingredients together and place them in a strainer to drain a little of the water.
