Ingredients
- 5 cups flour
- 1 1/2 tablespoons yeast
- 2 tablespoons sugar
- 2 tablespoons powdered milk (you can omit the powdered milk and instead add 1/2 cup warm water with 1/2 cup warm milk)
- 1 cup warm water
- 1/2 cup vegetable oil
- 1/2 cup yogurt
- 1 tablespoon salt
- Ingredients and Method for Meat Manakish Filling:
- 250 g meat
- 250 g finely chopped onion
- 600 g chopped tomatoes
- 1 tablespoon tomato paste
- 1 tablespoon tahini
- 1 tablespoon ground coriander
- 1 tablespoon mixed spice
- Hot pepper or chili flakes - optional
- Salt
Method
- We first start by mixing the yeast with the warm water, sugar, and powdered milk.
- Cover the yeast and let it activate for about 5 minutes.Timers: 5 min
- Add the oil, yogurt, and the remaining ingredients, then mix everything together. Add the flour and knead the manakish dough well until you get a soft dough.
- Shape the manakish dough into 12 balls, each weighing about 100 grams. Cover the dough balls and let them rise for about 1 hour.Timers: 60 min
- On a work surface, roll out each dough ball and prick it with a fork.
- Place a pan over the heat. Once it is hot, place the dough in it and add the filling: za'atar, cheese, or meat topping, حسب الرغبة والمتوفر.
- When the manakish are cooked over high heat and lightly browned, place them on a clean kitchen towel and cover them so they stay soft.
- Mix all the ingredients together and place them in a strainer to drain a little of the water.
