Easy Mughrabieh... This is one of the easiest ways to prepare Mughrabieh.

Ingredients:

1 whole chicken Aromatics for boiling chicken (cinnamon sticks - cloves - bay leaves - etc.) 6 cups or 1.5 liters of chicken broth 1 kg dried or frozen Mughrabieh grains 1 kg small onions 2 cups boiled chickpeas Salt 3 tablespoons butter 2 tablespoons flour 5 large tablespoons Mughrabieh spices (ready-made packet)

Instructions:

Rub the chicken with lemon and salt, then with flour, and wash it thoroughly with water.
Place it in a pot with water and aromatics and boil until completely cooked.
Meanwhile, if using dried Mughrabieh grains, place them in a pot with 1 tablespoon oil, lukewarm water, and a pinch of salt, and boil them like pasta.
When the Mughrabieh is completely cooked, drain it from the water, rinse it with cold water, and drain again.
Place the Mughrabieh grains in a pot with 1 tablespoon of butter and stir.
When the Mughrabieh softens and absorbs the butter, add half the amount of chickpeas and 2 tablespoons of Mughrabieh spice, and stir briefly.
Shortly after, add 1/2 cup of chicken broth and turn off the heat. Set it aside for the Mughrabieh grains to absorb the broth.
Meanwhile, prepare the sauce. In a pan, melt 2 tablespoons of butter, add the peeled small onions, and stir until the onions slightly change color.
Sprinkle 2 tablespoons of flour and stir quickly, then add the remaining boiled chickpeas and 3 tablespoons of Mughrabieh spice, and stir.
Cover them with chicken broth and let them simmer for some time over low heat until the onions are completely cooked.
Add the chicken pieces as they are or debone them, then add them and let the pot simmer for just a few minutes. Then serve the Mughrabieh hot.
