Milk cake — couldn't be easier

Ingredients

  • Lemon zest
  • 4 eggs
  • A small pinch of salt
  • 1 teaspoon liquid vanilla extract
  • 1½ cups sugar
  • ¾ cup vegetable oil
  • 1 cup milk
  • 2 teaspoons baking powder
  • 3 cups flour

Method

  1. Beat the eggs with the lemon zest, salt, and vanilla well.
  2. Add the sugar and beat again until the mixture turns pale and the sugar is completely dissolved.
  3. Add the oil and milk and beat until the mixture is uniform.
  4. Sift the dry ingredients and gradually add them to the milk-cake batter, folding gently from top to bottom.
  5. Pour the batter into a pan greased with oil or tahini and bake in a preheated oven at 180°C (350°F) for about 45 minutes or until done.

  6. Test the cake for doneness before removing it from the oven.
  7. Let it cool completely before serving.
