Homemade Qatayef Dough... a hundred times better than store-bought!

Ingredients

  • 4 cups all-purpose flour
  • 5 cups liquid milk
  • or
  • 1.5 cups powdered milk dissolved in 5 cups water
  • 1/4 cup sugar
  • 1 tablespoon instant yeast
  • 1 teaspoon baking powder
  • Ingredients for Ashta (Cream) or Qaimar Filling:
  • 4 cups water
  • 2 cups powdered milk
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 3 tablespoons orange blossom water
  • 1 (170g) can ready-made Ashta (cream) or Qaimar

Method

  1. Mix all ingredients well and set the soft dough aside for an hour and a half to rest before starting to work with it.
  2. In the meantime, prepare the filling.
  3. Once the dough has rested, place a wide non-stick pan over heat and pour the dough into the pan to form small circles or discs.
  4. After about two minutes, you will see small bubbles appear on the qatayef disc. When the bottom is golden, remove it from the heat and set it aside to cool before filling.
  5. Cover them with a thin towel to prevent them from drying out.
  6. Mix the flour with the milk, sugar, and water well.
  7. Place the mixture over heat until it thickens.
  8. Add the orange blossom water and stir the ingredients well until combined.
  9. Remove the mixture from the heat, add the can of ready-made Ashta or Qaimar, and stir well until the ingredients are blended and smooth.
  10. Set the Ashta aside to cool before using it to fill the qatayef.
  11. Garnish the qatayef discs with syrup (qatar or shira) and pistachios.
