Ingredients

Start here, then move straight into the method.

  • 500 grams pitted dates
  • 1 tablespoon baking soda
  • 1 cup boiling water
  • 4 eggs
  • 1 teaspoon vanilla
  • 1 1/2 cups sugar
  • 1 cup oil
  • 1 cup milk
  • 3 cups flour
  • 1 tablespoon anise + ground cardamom, mixed together
  • 1 teaspoon baking powder

Method

Follow the cooking sequence without leaving the page.

  1. Add the baking soda to the dates, then pour the cup of boiling water over them and set aside for 10 minutes.

  2. Whisk the eggs with the vanilla and sugar until you get a creamy white mixture and the sugar dissolves completely.
  3. Gradually add the oil, continue whisking, then add the milk and whisk again.
  4. Mix the dry ingredients: flour, anise, cardamom, and baking powder.
  5. Add the dry ingredients to the creamy egg mixture and mix well using a folding motion from top to bottom.
  6. Mash the dates with a fork after 10 minutes of soaking in the boiling water and baking soda. Once softened, add them to the cake batter and mix.

  7. Grease a large cake pan with butter and pour in the date cake batter.
  8. Place it in a preheated oven on the middle rack and bake at a low temperature (about 160°C) until the cake is done.
  9. Serve the date cake at room temperature.
