Ingredients

  • 2 cups flour
  • 1 cup shredded coconut
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla
  • 2 tablespoons cornstarch
  • 4 eggs
  • a pinch of salt
  • 1 teaspoon white vinegar
  • 1 and 1/4 cups sugar
  • 1 cup yogurt
  • 1/2 cup vegetable oil

Method

  1. In a deep bowl, sift the flour with the baking powder, cornstarch, and vanilla.
  2. Add the shredded coconut, mix well, and set aside.
  3. Whisk the eggs with a pinch of salt, then add the lemon zest, vinegar, and sugar.
  4. Whisk the coconut cake batter well until the sugar completely dissolves, then add the yogurt and oil and whisk until you get a smooth batter.
  5. Add the dry ingredients to the batter in two batches and mix together...
  6. Pour the batter into a cake pan greased with butter and flour, and bake at 180 degrees from the bottom for 40 minutes, then brown it from the top.
