Ingredients

  • 1 kg boneless, skinless chicken, thinly sliced
  • 2 small teaspoons vinegar
  • 1 cup oil
  • 2 tablespoons soy sauce
  • 1 tablespoon fajita seasoning
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1/2 teaspoon cinnamon
  • 1 teaspoon black pepper
  • 1 tablespoon garlic powder
  • salt
  • sesame oil
  • Sautéed vegetables: corn, mushrooms, bell peppers, onion wedges
  • Avocado Sauce:
  • 1 ripe avocado
  • 1/2 cup mayonnaise
  • Pinch of salt
  • 1 tablespoon lemon juice
  • 1 tablespoon soy sauce

Method

  1. We marinate the chicken with the assorted spices the night before cooking the fajitas.
  2. We sauté the vegetables in sesame oil until they soften and add to them 1 teaspoon fajita seasoning and 1 tablespoon soy sauce.
  3. We fry the chicken over high heat and when it is cooked we add it on top of the vegetables and put cheddar cheese until it melts....
  4. We serve avocado sauce or guacamole alongside the chicken fajitas
  5. Avocado Sauce:
  6. 1 small avocado
  7. 1/2 cup mayonnaise
  8. A pinch of salt
  9. 1 tablespoon lemon juice
  10. 1 tablespoon soy sauce
