- 1 kg boneless, skinless chicken, thinly sliced
- 2 small teaspoons vinegar
- 1 cup oil
- 2 tablespoons soy sauce
- 1 tablespoon fajita seasoning
- 1 teaspoon paprika
- 1 teaspoon oregano
- 1/2 teaspoon cinnamon
- 1 teaspoon black pepper
- 1 tablespoon garlic powder
- salt
- sesame oil
- Sautéed vegetables: corn, mushrooms, bell peppers, onion wedges
- Avocado Sauce:
- 1 ripe avocado
- 1/2 cup mayonnaise
- Pinch of salt
- 1 tablespoon lemon juice
- 1 tablespoon soy sauce
Method
- We marinate the chicken with the assorted spices the night before cooking the fajitas.
- We sauté the vegetables in sesame oil until they soften and add to them 1 teaspoon fajita seasoning and 1 tablespoon soy sauce.
- We fry the chicken over high heat and when it is cooked we add it on top of the vegetables and put cheddar cheese until it melts....
- We serve avocado sauce or guacamole alongside the chicken fajitas

- 1 small avocado
- 1/2 cup mayonnaise
- A pinch of salt
- 1 tablespoon lemon juice
- 1 tablespoon soy sauce
