Easy Chicken Fajitas... A delicious, flavorful recipe — served with avocado sauce

Ingredients

  • Chicken breast, thinly sliced lengthwise
  • Whole spices: bay leaves, cinnamon stick, cardamom pods
  • Assorted bell peppers, sliced
  • 1 medium onion, cut into wedges
  • 1 cup fresh mushrooms, sliced
  • 1/2 cup oil
  • 1/2 tsp fajita seasoning
  • 1/2 tsp seven-spice blend
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • A pinch garlic powder
  • A pinch ground ginger
  • 2 tbsp soy sauce
  • Shredded mozzarella cheese
  • Chopped lettuce
  • Pickles
  • Corn

Method

  1. Put the sliced chicken in a pan or skillet with the whole spices over the heat and cook, stirring, until the liquids evaporate.
  2. Remove and discard the whole spices, then add the oil, bell peppers, onion and mushrooms and sauté.
  3. Add the soy sauce and spices and stir, then reduce the heat and simmer for about 10 minutes or until cooked through.
    Timers: 10 min
  4. Sprinkle the mozzarella over the fajita mixture and wait for it to melt, then turn off the heat.
  5. Choose the bread you prefer. Spread the avocado sauce on the bread, then the fajita mixture, then a little corn, lettuce and pickles on top.
  6. Lightly toast the sandwiches on a pan or grill and serve.
