Easy cheese halawa — a tried-and-true homemade recipe!

Ingredients

  • 250 grams granulated sugar
  • 250 grams Czech dessert cheese or unsalted mozzarella
  • 250 grams medium semolina
  • 650 milliliters water
  • 1 teaspoon rose water
  • 1 tablespoon orange blossom water
  • homemade or ready-made clotted cream (qishta) *

Method

  1. Place the semolina and sugar together and mix well.
  2. Put the water, rose water, and orange blossom water into a saucepan.
  3. When the mixture comes to a boil, add the semolina-and-sugar mixture slowly and in stages, stirring continuously until it has all been incorporated.
  4. Stir until the semolina grains are cooked, dry, and set. Then turn off the heat and add the cheese.
  5. Stir the mixture quickly until all the cheese has melted.
  6. On a flat surface or on the kitchen marble, put a little qater (sugar syrup) or shireh, brush it onto the layers, press them together, and leave them to cool.
  7. Roll out the halawa-with-cheese dough using a rolling pin and spread the clotted cream (qishta). Either roll it up into a log, or take each piece and fold the sides in; garnish with nuts and extra clotted cream (qishta) as desired.
