Basbousa: a simple, delicious recipe with very few ingredients

Ingredients:

\r\n

1/2 kilogram semolina

\r\n

250 g granulated sugar

\r\n

1/2 cup syrup (qatar / shira)

\r\n

2 tablespoons powdered milk

\r\n

1/4 teaspoon baking soda

\r\n

1 cup water, or less depending on the type of semolina

\r\n

1 tablespoon tahini for greasing the pan

\r\n

Nuts

\r\n

Syrup for soaking

\r\n

Ghee

\r\n \r\n

Method:

\r\n

Mix semolina, sugar, powdered milk, and baking soda.
Add the syrup and blend it well with the dry ingredients.
Add water and mix until just combined, not kneaded.
Grease a 30 cm pan with tahini to prevent sticking.
Spread the batter in the pan and leave it uncovered in a closed place such as an oven, microwave, or cupboard overnight.
The next day, moisten your hands with water and press the basbousa lightly.
Use a sharp knife to score lines on the surface to mark the shapes and sizes of the pieces, but do not cut through, as it\'s still raw...
Scatter the nuts on top within the scored lines.
Place the pan in a hot oven at 200 degrees Celsius.
After 15 minutes, remove the pan from the oven and cut along the lines well so it cooks through from inside.
After 20 minutes, remove the pan from the oven and pour the hot syrup over its surface, and spread pieces of ghee.
The pieces of ghee will melt very quickly because the basbousa is hot.
Let the basbousa cool to room temperature completely before serving.

How to make syrup (qatar or shira):

\r\n

Put two cups of sugar with one cup of water in a pot over heat and stir until the sugar dissolves well. After the mixture boils for a few minutes, add one tablespoon lemon juice and simmer until the syrup thickens to a syrupy consistency.
