Ingredients
- 2 cups semolina
- 2 tbsp butter
- 1/2 cup syrup
- 1 cup coarsely ground pistachios
- 2 tbsp orange blossom water
- 2 tbsp rose water
- Fresh ashta
- For coating the balls: 1/2 cup coarsely ground pistachios
- Honey or syrup for serving

Method
- In a pot over low heat, put the semolina and stir constantly until it turns brown.
- Add the butter and stir until the semolina absorbs all the butter and they are well combined.
- Add coarsely chopped pistachios and mix them together.
- Add orange blossom water, rose water, and syrup, and stir until they are well incorporated and form a soft, cohesive dough.
- Remove the dough from the heat and set it aside to cool.
- Shape medium-sized balls from the dough.
- Make a small hole in each ball and fill it with a little cold clotted cream, then reshape into a ball to seal it.
- Dip the Dawouqia balls in pistachios.
- At serving, top with some fresh clotted cream if you like, or serve the balls as they are. Serve with honey or syrup.
- Note: You can add one teaspoon of green food coloring to the dough to make greener Dawouqia, if desired.
