One of our favorite recipes—light, clean, and perfect for family and guests. Its name varies by country; some call it Maqarota al-Tamr, others call it Ma’rouk; we’ll settle with Date Cookies as a common name.

Date Cookies: \r\nIngredients:\r\n1 kilogram flour\r\n500 g butter\r\n200 ml milk\r\n80 g sugar\r\n2 tablespoons anise\r\n2 tablespoons mahlab

\r\nPreparation:\r\nWe mix the ingredients well until we have a soft but cohesive dough...let it rest for about half an hour before we start working.\r\nThen we roll it out on a smooth surface, fill one end lengthways, and sprinkle a few walnut pieces; roll into a cylinder and cut along its length as the filling ends (as shown in the accompanying picture)\r\n\r\nWe first pass the rolls through a little milk and then through a plate of sesame seeds...\r\n\r\nThen bake in a preheated oven at 225°C until golden for about 15 minutes...\r\nWhen cooled, cut as shown in the picture...\r\n\r\nFilling:\r\n500 g pitted dates, ground\r\n1 tablespoon cinnamon\r\n3 tablespoons butter\r\n\r\nMix the ingredients together\r\n

Ingredients
- 1 kilogram flour
- 500 grams butter
- 200 milliliters milk
- 80 grams sugar
- 2 tablespoons anise
- 2 tablespoons mahleb
- Filling preparation:
- 500 grams pitted and ground dates
- 1 tablespoon cinnamon
- 3 tablespoons butter

Method
- Mix the ingredients well until you have a soft but cohesive dough, then set it aside to rest for about half an hour before you begin working with it.
- Then roll it out on a smooth surface, fill one long edge lengthwise, sprinkle a few walnut pieces over it, roll it into a cylinder, and cut lengthwise up to where the filling ends (as shown in the accompanying photo).
- Brush the filled cylinders first with a little milk, then roll them on a plate full of sesame seeds.
- Then bake them in a preheated oven at 225°C until they turn golden, for about 15 minutes.
- When they have cooled, cut them in the shape shown in the photo.
- Mix the ingredients together.
