- 1 1/4 cups sugar
- 1/4 cup water
- 3 egg whites
- 2 drops of vinegar

Method
- Begin by placing two drops of vinegar in the water, then add all ingredients and continue beating until the sugar dissolves completely, about five minutes...
- Meanwhile, in a pot on the stove, bring a small amount of water to a boil. When the water boils, take the whipped mixture and place the bowl over a heatproof setup (double boiler).
- Continue whisking over the steam (bath of water) until you obtain a cream-like mixture... whisk for about 7 minutes... then remove from heat and whisk vigorously for about 15 more minutes until the cream thickens well.Timers: 7 min
- Place the filling in a pastry bag and fill plain cookies by placing a bit of cream on top of a plain biscuit, then another biscuit, and so on until the amount is finished...
