Cold pumpkin cake... a new and special recipe

Ingredients

Start here, then move straight into the method.

  • Layer 1
  • 2 cups mashed pumpkin
  • 2 packs plain biscuits
  • 1/4 tsp turmeric (yellow spice)
  • Layer 2
  • 2 eggs
  • 2 tbsp cornstarch
  • 2 tbsp all-purpose flour
  • 1/2 cup sugar
  • A dash of vanilla
  • 2 cups milk
  • 2 tbsp orange blossom water
  • Layer 3
  • 3/4 cup sweetened condensed milk
  • 1 can (170 g) clotted cream (qishta)
  • 2 1/2 tbsp cocoa powder
  • 1/4 cup milk (or less as needed)

Method

Follow the cooking sequence without leaving the page.

  1. Put the cooked pumpkin, well drained of water, into a bowl and add the biscuits broken by hand along with the yellow filling, and mix them together.
  2. Pack them into a Pyrex dish or serving glasses as desired and set aside.
  3. In a saucepan, combine the ingredients for the second layer while cold, then place over heat and stir until the mixture thickens; then add orange blossom water and mix well.
  4. Pour the mixture over the pumpkin and biscuit layer and smooth the surface.
  5. Let the Pyrex cool to room temperature then put it in the fridge to chill well.
  6. In a bowl, put the condensed milk with the clotted cream and cocoa and mix well, then add some liquid milk in batches according to how loose or thick you want the mixture and mix well.
  7. Pour the chocolate layer over the top after the Pyrex has cooled in the fridge.
  8. Garnish the pumpkin cake with pistachios as desired.
  9. Return it to the fridge to chill before serving.
