- 2 eggs
- 1 teaspoon vanilla extract
- 2 teaspoons baking powder
- 1 cup milk
- 1 cup oil
- 1 cup sugar
- 1 cup shredded coconut
- 1 1/4 cups flour
Method
- Whisk the dry ingredients together first, then add all ingredients and mix until the batter is smooth.
- Grease a cake pan or baking dish with a little vegetable oil and dust with a little flour, then pour the batter into the pan.
- Bake the pan in the middle of the oven at 180°C for about 45 minutes, or less depending on your oven.Timers: 45 min
- Once the coconut cake is done, drizzle it with a little syrup and garnish with shredded coconut.
