Ingredients

  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1 cup milk
  • 1 cup oil
  • 1 cup sugar
  • 1 cup shredded coconut
  • 1 1/4 cups flour

Method

  1. Whisk the dry ingredients together first, then add all ingredients and mix until the batter is smooth.
  2. Grease a cake pan or baking dish with a little vegetable oil and dust with a little flour, then pour the batter into the pan.
  3. Bake the pan in the middle of the oven at 180°C for about 45 minutes, or less depending on your oven.

  4. Once the coconut cake is done, drizzle it with a little syrup and garnish with shredded coconut.
