Ingredients

  • 1 cup ground biscuits
  • 1 cup ground unsalted peanuts
  • 3 cups coconut
  • 1/2 cup syrup
  • 1/2 cup sweetened condensed milk
  • 1 tablespoon powdered sugar
  • Note:
  • You can also make coconut and peanut balls by mixing the two mixtures together and adding a little condensed milk as needed, to make the dough softer and easier to shape into balls.
  • Coat the balls with shredded coconut.
  • Refrigerate for a few hours, then serve.

Method

  1. Place the biscuits, ground peanuts, and syrup in a bowl and mix well, then knead until the mixture comes together.
  2. In another bowl, place the coconut, condensed milk, and sugar, and knead well until combined and cohesive.
  3. Line a tray with parchment paper, then spread half of the coconut mixture evenly and press it down well so the surface is level.
  4. Spread the biscuit and peanut mixture over it and press it down well too.
  5. Spread the remaining coconut mixture on top and press it down as well.
  6. Place the tray in the refrigerator for a few hours before cutting, so it firms up well.
