- 1/3 cup sugar
- 1 teaspoon salt
- 1/2 cup cold butter, cut into small cubes

- Ganache method:
Method
- Beat the sugar, flour, salt, and butter together well with an electric mixer until you get a smooth mixture. You can also use a mixer or a hand whisk.
- Add the egg and bring the dough together.
- Let the dough rest in the refrigerator for half an hour before using.
- Roll out the dough on a surface lightly dusted with flour, then line the appropriate tart pan with it, or cut and line small tart pans.
- Use a fork to prick the dough all over so it does not puff up during baking.
- Place baking paper over the dough and add a weight, such as lentils or beans, so the dough does not rise during baking in the oven.
- Place the tart dough on the middle rack of the oven and bake for 20 minutes at 180°C.Timers: 20 min
- Remove it from the oven, lift off the beans and baking paper, then brown the top.
- Let the tart shell cool, then spread the cold chocolate ganache inside and decorate with almonds.
- Place the liquid cream in a saucepan over the heat until hot, but do not let it boil.
- Once hot, add the chocolate pieces and stir until melted.
- When the ganache cools and reaches room temperature, pour it into the tart and decorate with ground almonds.
