Chocolate chip cookies with ganache — a wonderful recipe that chocolate lovers will enjoy

Ingredients

  • 2 cups (or 250 g) all-purpose flour
  • 2 egg yolks
  • 1/3 cup + 2 tbsp brown sugar (about 80 g)
  • or

  • 1/2 cup cold butter, chopped + 5 tablespoons (or 150 g)
  • 150 g
  • 1/2 tsp vanilla
  • 1/4 tsp salt

  • Ganache:
  • 100 g dark chocolate
  • 100 g liquid (heavy) cream

Method

  1. In a food processor or blender, place the flour, sugar, and chopped butter. Pulse/process until combined.
  2. Add the egg yolks and vanilla and continue processing until incorporated.
  3. When a dough forms, transfer it to a bowl, add the chocolate chips, and knead by hand until evenly distributed.
  4. Roll the dough lightly, wrap it in plastic wrap, and chill in the refrigerator for about 30 minutes.

  5. After 30 minutes, roll or press the dough to about 2 cm thick, then cut out cookies with a cookie cutter.

  6. Also cut a small circle out of the center of some cookies to create a cavity for the ganache. Make sure the bottom stays intact so the ganache fills from the top only.
  7. Place the chocolate chip cookies in a preheated oven at 180°C and bake for about 10 minutes.

  8. Meanwhile, prepare the ganache: place the dark chocolate and cream in the microwave and heat briefly in short bursts totaling about 1 minute. Let rest about 5 minutes, then stir until smooth and leave at room temperature.

  9. When the cookies are done baking, spoon the ganache into the center cavities.
  10. Serve the chocolate chip cookies with ganache once they have cooled.
