Chicken with vegetables baked in the oven... a dish suitable for every day and every occasion.

Ingredients:

1 chicken, cut up

500 g potatoes

500 g eggplant

500 g zucchini

500 g green beans or snap beans

1 kg tomatoes

1 cup peas

1 dry onion

1 head garlic

1 green bell pepper

Vegetable oil

Salt and spices, to taste

Preparation method:

Fry the chicken pieces in a pot with a little oil until browned on all sides.
Add the green beans and chopped onion, and stir until the vegetables begin to wilt.
Add the tomatoes, diced into small cubes.
Leave the pot over low heat until the chicken pieces are cooked through.
In another pan, add a little oil and fry the remaining vegetables until tender.
Add the vegetables over the pot and leave for another 10 minutes so the flavors combine.
Transfer the chicken and vegetables from the pot to a baking dish and place in the oven until the top is browned.
