Chicken with potatoes and peas in curry ... an easy, delicious recipe for lunch!!

3 chicken breasts, cut into medium cubes

Potatoes, cut into cubes

1 garlic clove

1 small onion

1 cup or more peas

2 tablespoons tomato paste

1/2 tablespoon pepper paste

A pinch of black pepper

1/2 tablespoon or 1 teaspoon curry powder, to taste

Oil

Salt

Heat oil in a wide skillet over medium-high heat until hot. Add the chicken pieces and sauté, turning, until they turn white on all sides.
Add salt, curry powder, and the minced garlic; stir well, cover the pan, and cook until the chicken is cooked through and the liquids reduce.
Add the chopped onion and cook until the onion softens.
Add the potato cubes, tomato paste, and pepper paste; cover them with water and stir well so the paste dissolves into the liquid.
Bring the mixture to a boil over high heat, then reduce the heat and simmer until the potatoes are tender.
Add the peas, stir, and cook the chicken, potatoes, and peas for an additional 5 minutes until the peas are done.
Serve alongside white rice.

Note: Add the tomato paste together with the potatoes and water immediately to help the potato cubes keep their shape and avoid overcooking.
