Chicken and potato stew, also called "rosto"—though it is definitely different from meat rosto. Here is the tastiest way to make this stew with chicken breast, and you can also make it with thighs.
Ingredients
- Half a kilo chicken breast
- About 2 liters of water or enough to cover the chicken
- 1 onion, cut into quarters
- Poaching aromatics such as cardamom pods, bay leaves, and a cinnamon stick
- 4 potatoes
- Salt
- 1 teaspoon turmeric
- 1 tablespoon safflower
Method
- After washing the chicken, cover it with water and place it over the heat. Skim off any foam that rises to the surface, then add the onion and aromatics and let it simmer over low heat until cooked through.
- Then strain the chicken breast and cut it into cubes, reserving the broth (the chicken can also be cut before boiling).
- Peel the potatoes, cut them into large cubes, wash and drain them, then fry them in plenty of oil until cooked through.
- Place the potato and chicken cubes in a pot, then add salt to taste, along with the spices and the chicken poaching broth.
- Let the chicken and potato stew boil for about 15 minutes over medium heat, then serve it with fluffy rice.Timers: 15 min
