Cauliflower Maqluba.. for those who prefer rice with cauliflower instead of eggplant

Ingredients:

\r\n

1 cup Egyptian rice

\r\n

1 cup American long-grain rice

\r\n

1 kilogram diced meat

\r\n

1 red bell pepper

\r\n

1 green bell pepper

\r\n

1 tomato

\r\n

1 onion

\r\n

10 garlic cloves

\r\n

2 cinnamon sticks

\r\n

1 loomi (dried lime)

\r\n

3 bay leaves

\r\n

1 kilogram cauliflower

\r\n

4 cups water or as needed

\r\n

1 teaspoon black pepper

\r\n

1 teaspoon white pepper

\r\n

1 teaspoon ground turmeric or saffron

\r\n

1 teaspoon saffron or safflower

\r\n

1 teaspoon ground cumin

\r\n

salt to taste

\r\n

3 tablespoons oil

\r\n \r\n

Method:

\r\n

Soak the rice for 15 minutes in salted water, then drain well
Add half of the fragrant spices to the rice, mix gently, and set aside
Boil the meat in a pot with loomi, bay leaves, cinnamon sticks, and a pinch of salt until tender
Place the meat in a dish and sprinkle with the remaining half of the fragrant spices
In another pot, fry the onion and garlic in a little oil until softened
Add the diced tomatoes and peppers over the onion and stir until the vegetables soften slightly
Spread the meat pieces, then the cauliflower, and finally the rice
Pour in four cups of the meat broth, cover the pot, and bring to a boil on high heat
Reduce heat and simmer until the rice is cooked
Serve cauliflower maqluba with salad and yogurt
