  • 7 egg yolks
  • half a cup sugar
  • 2 tablespoons sugar
  • 7 egg whites
  • 2 teaspoons sugar
  • half a cup flour
  • 3 tablespoons cocoa powder
  • Pinch of salt
  • Chocolate ganache:
  • Fresh whipping cream
  • Plain chocolate, one tub of fresh cream
  • 2 tablespoons icing sugar
  • 2 tablespoons cocoa powder
  • Butter cream:
  • 200 g soft butter
  • 1 tablespoon cocoa powder
  • Pinch of vanilla
  • 2 tablespoons milk

Method

  1. Whisk the yolks with the sugar until thick and pale...
  2. In a second bowl, whisk the egg whites with the sugar until stiff. Mix the two mixtures with a wooden spoon and gradually add the flour and cocoa little by little...
  3. Spread the mixture in a tray lined with parchment paper.. Bake in a preheated oven at 190°C for 15 minutes... Be careful not to leave the cake in the oven too long so it does not become hard...

  4. Roll the cake in a damp towel and let it cool and rest completely... Then carefully unroll the cake and brush it with syrup and cream, then roll it up again..
  5. Slice the cake, spread it with cream, and top it with chocolate ganache
  6. Whisk all the ingredients in an electric mixer on high speed
  7. Whisk the ingredients at high speed in an electric mixer. If the cream needs more milk, add fresh cream with chocolate
