Ingredients:

Beef suitable for roasting or oven grilling

Salt

Pepper

1 tablespoon olive oil

2 tablespoons mustard

1 cup fresh mushrooms

1/2 cup peeled almonds

3 cloves garlic

Ready-made puff pastry

1 egg

Method:

Season the beef with salt, pepper, and cinnamon, then sear it in olive oil on all sides for a few minutes. The beef does not need to be cooked at this stage; we only want to give it a nice color.

Remove the beef from the heat and brush it immediately with mustard on all sides while it is still hot so it absorbs the mustard well.

Meanwhile, grind the fresh mushrooms with the peeled almonds and garlic. Place the mushroom and almond mixture in a pan over the heat and stir without any oil until the mixture is completely dry and no liquid remains.

Roll out the puff pastry, spread a layer of the mushroom and almond mixture, and place the beef on top.

Wrap the pastry well around the beef, wrap it in kitchen plastic wrap, and tighten it well and securely. Place it in the fridge (not the freezer) for about 30 minutes. After the time has passed, remove it from the fridge, brush it with egg, and make small pricks in it with the tip of a knife.

Bake the beef in the oven for at least 45 minutes, or until you are sure the beef is fully cooked. Cooking time varies depending on the size of the beef.
