Ingredients:

1 to 1.5 kg beef fillet, one piece

6 garlic cloves

\r\n

rosemary

\r\n

5 whole allspice berries

\r\n

250 g beef fat

\r\n

salt

\r\n

1 whole clove

\r\n

bay leaf

\r\n

Preparation:

\r\n

Season the meat with salt and make several deep, slender slits in the roast while keeping their shape...

\r\n

Dust the meat with a touch of black pepper, insert garlic cloves into the slits along with rosemary and allspice berries...

\r\n

Cut the beef fat into long strips to match the length of the meat as shown in the accompanying photos and place them lengthwise on both sides... and tie the roast with heat-resistant twine...

\r\n

In a skillet, add a whole clove, bay leaf, rosemary and a little oil... sear the meat on both sides...

\r\n

Prepare a roasting pan lined with foil or aluminum foil, wrap the meat in foil and seal it, and add the oil and aromatics we fried the meat with, along with 1 cup water and 1 teaspoon salt...

\r\n

Place them in the roasting pan and slide the pan into a hot oven for two hours, turning it every hour to cook evenly from all sides.

Serve the roast beef with mashed potatoes, vegetables and roasted potatoes
