How to make Awama — a very tasty dessert despite its simplicity

2 cups flour

1/2 cup cornstarch

1 1/4 cups water

1 tablespoon yeast

1 tablespoon sugar

1 tablespoon oil

a pinch of salt

Syrup (Qater):

4 cups sugar

2 cups water

1 lemon (for juice)

orange blossom water (to taste)

rose water (to taste)

Mix all the dough ingredients together — you should get a soft batter.
Let the batter rest until it ferments (rises).
When it has risen, stir it again, then transfer it to a piping bag.
Pipe small balls of dough directly into hot deep oil. Fry them once until they take a light color, then remove them from the oil.
Fry the awama balls a second time until they reach the desired golden color.
Immediately after the second frying, drop the balls into warm, thick syrup.
Remove the pieces from the syrup and let them drain briefly, then serve.
