Arabic Safuf — a very popular sweet thanks to its delicate flavor, lightness and ease of preparation.

Ingredients

  • 1 cup fine semolina
  • 1 cup all-purpose flour
  • 2 tablespoons butter at room temperature, or ghee + butter
  • 1 cup milk
  • 1 cup syrup (qatir / shira)
  • 1/2 to 3/4 cup sugar, to taste
  • 1 teaspoon yellow food coloring or turmeric
  • 1 teaspoon baking powder
  • Nuts for garnish

Method

  1. Mix all the ingredients thoroughly until the sugar dissolves and the batter is uniform.
  2. Grease a baking tray with a little tahini and spread the Safuf mixture evenly in the tray.
  3. Garnish with nuts as desired.
  4. Bake in a preheated oven at 170°C (top and bottom heat) until the cake is cooked.
  5. When you remove the tray from the oven, brush the top with syrup to give it shine and moisture.
  6. Serve the Arabic Safuf when it has cooled.
