Almond Sponge Cake... a dream cake... wonderful for important occasions.

Ingredients:

6 room temperature eggs Pinch of salt 1 cup sugar 1 cup flour 1 cup finely ground almonds 1 teaspoon almond extract or vanilla Cake Frosting Ingredients: 200 grams white chocolate 3 tablespoons coconut milk 250 grams room temperature mascarpone cheese 2 cups liquid whipping cream 1/4 cup fine sugar 1/2 cup shredded coconut 1 teaspoon almond extract or vanilla

Instructions :

Separate egg whites from yolks.
Whisk the egg whites with an electric mixer or whisk, along with a pinch of salt and sugar, until the volume doubles.
In the egg yolk bowl, stir them with vanilla, then add them over the whites and gently fold with a spatula or spoon from top to bottom.
Add the almond flour (ground almonds) and fold from top to bottom with a spatula.
Add the flour in three batches, making sure to fold in the same way so as not to deflate the egg whites.
Place parchment paper in a 9-inch cake pan and pour the cake batter into it.
Place the pan in a preheated oven at 170°C for about 40 to 45 minutes.
When the cake is done, set it aside to cool.
Meanwhile, prepare the white chocolate frosting: place coconut milk over the small white chocolate pieces and melt the chocolate in a double boiler.
In another bowl, place the mascarpone cheese and whisk it lightly until smooth.
Add the melted chocolate over the cheese and whisk.
In another bowl, whisk the liquid cream with fine sugar and vanilla until its volume doubles.
Combine the cheese mixture with the cream mixture and fold, then add shredded coconut and mix well.
When the cake cools, divide it into two or more equal layers. Sprinkle the cake layers with a little coconut milk to give it moisture.
Fill the cake with the cream mixture we prepared, and repeat the process until all layers are used.
Cover the top and sides of the cake with cream, then cover it with shredded coconut.
Decorate the almond sponge cake with crushed almonds and Raffaello pieces.
Place it in the refrigerator for at least three hours before serving.
