Mafroukeh with fresh ashta in an easy homemade recipe ... garnish with nuts or fried dough pieces, as desired

Ingredients

  • 1 cup sugar
  • 1 cup hot water
  • 1 tablespoon butter
  • 1 cup fine semolina
  • A splash of orange blossom water and a splash of rose water
  • Ashta:
  • 1 liter milk or 4 cups
  • 1 tablespoon yogurt
  • Juice of half a lemon
  • 1 container qaimar ashta or mascarpone cheese

Method

  1. Place 1 cup of sugar in a pot over the heat and leave it over low heat until the sugar melts
  2. Add 1 cup of hot water and stir so the sugar does not clump and dissolves completely and caramelizes
  3. In a second pot, place the butter with the fine semolina and stir over low heat until the butter melts..
  4. Add the caramel over the semolina and stir, then add the orange blossom and rose water and stir again until mafroukeh dough forms
  5. Turn off the heat and spread the mafroukeh dough in a serving dish and leave it enough time to cool well
  6. Prepare the ashta... put the liquid milk in a pot over the heat until it warms up.. then add the lemon juice and yogurt so the milk curdles and turns into curds
  7. After a few minutes, turn off the heat under the milk and strain it to get rid of the water completely, keeping the curds
  8. Mix the qaimar with the curds and place the ashta in the fridge to cool well before using
  9. Spread a layer of ashta after it cools over the mafroukeh dough and garnish with fried nuts as desired and available
