Madlouqa is a delicious Eastern dessert that’s easy to make, and here we present it as small discs served as individual portions, each decorated separately. You can also use the same ingredients and method to create a larger Madlouqa in its traditional form.

\r\n\r\n \r\n\r\nIngredients:\r\n\r\n1.5 cups sugar\r\n\r\n3 cups water\r\n\r\n1.5 cups fine semolina\r\n\r\n0.5 cup unsalted butter\r\n\r\n1 cup ground pistachios\r\n\r\nCream\r\n\r\nNuts for garnish\r\n\r\nPreparation:\r\n

\r\n\r\nWe caramelize 1.5 cups of sugar on the stove until it becomes golden... It’s best not to overdo it, or the flavor will taste bitter...\r\n\r\nAdd three cups of water (the sugar will harden and dissolve gradually with heat). When it dissolves completely, add 1.5 cups fine semolina and stir the mixture, then add a small cube of butter (about a little teaspoon) and keep the mixture on the heat for about five minutes until the semolina is cooked... Then finally add 1 cup ground pistachios...\r\n\r\nRemove the mixture from the heat and pour into a dish; refrigerate... When the Madlouqa mixture cools, shape it as desired; you can press the entire amount into the serving dish directly, or take small portions and shape them into thick, tall discs, then top with cream as shown in the accompanying photo and garnish with pine nuts and pistachios or as you like...\r\n\r\nCream method\r\n5 cups powdered milk\r\n8 cups water\r\nA small cup white vinegar\r\nWhen the milk boils, lower the heat and add the vinegar. Start separating the curds and place them in a sieve; add a can of Qimar cream\r\n

  • 1½ cups sugar
  • 3 cups water
  • 1½ cups fine semolina
  • 1/2 cup unsalted butter
  • 1 cup ground pistachios
  • Qishta (clotted cream)
  • Nuts for garnish

Method

Follow the cooking sequence without leaving the page.

  1. Caramelize 1½ cups sugar over the heat until it turns golden... It’s best not to overdo the caramelization so the flavor does not become bitter...
  2. Add 3 cups water (the sugar will harden and then gradually dissolve with the heat); when it has completely dissolved add 1½ cups fine semolina and stir the mixture, then add a small block of butter (approximately a small teacup) and keep the mixture on the heat for about five minutes until the semolina is cooked.... Finally add 1 cup ground pistachios ...
  3. Remove the mixture from the heat and pour it into a dish and place it in the refrigerator...
  4. When the Madlouqa mixture cools, shape it as you wish; you can spread the whole quantity in a serving dish directly or take small pieces and shape them into thick, tall rounds; put Qishta on top as shown in the accompanying picture and garnish with nuts such as pine nuts and pistachios or as desired...
  5. Clotted cream (Qishta) method
  6. 5 cups powdered milk
  7. 8 cups water
  8. A small coffee-cup of white vinegar
  9. When the milk starts to boil, reduce the heat and add the cup of vinegar
  10. Begin separating the curds and place them in a sieve, and add with them a can of Qimar clotted cream
