Upside-Down Rice with Fava Beans and Chicken

Upside-down rice with fava beans and chicken... a home-style recipe that may be new to many
Ingredients
Start here, then move straight into the method.
- Chicken
- Seasonings for boiling the chicken
- 1/4 cup oil or 1 large spoonful of ghee
- 1 medium onion, finely chopped
- 3 cloves garlic, crushed
- 1/2 kilo green fava beans, or whole fava beans in their outer pods
- 2 cups rice
- 1 teaspoon salt
- 1/4 teaspoon seven-spice blend
- 1/4 teaspoon black pepper
- 1/4 teaspoon cinnamon
- 1/4 teaspoon turmeric
- 1/4 teaspoon dried coriander
- Chicken stock
- Fried nuts for garnish
Method
Follow the cooking sequence without leaving the page.
- Wash the chicken, then boil it with the seasonings until cooked through
- Put 1/4 cup oil or 1 large spoonful of ghee in a pot over the heat and sauté the chopped onion and crushed garlic in the oil
- When they soften, add the chicken pieces and stir
- After a short while, when the chicken starts to color, add the green fava beans, shelled or whole after cutting
- Add the rice too, after soaking it for half an hour in advance and draining it, then stir
- Add the salt and spices and stir, then cover the rice with the strained chicken stock, free of the boiling seasonings... at a rate of 1 1/2 cups of stock for each cup of rice, or according to the type of rice
- After the stock comes to a boil... reduce the heat under the pot and cover it
- Leave the rice over low heat for half an hour until cooked
- Serve the rice with fava beans and chicken in a serving dish and garnish with fried nuts... and you can add more pieces of boiled and oven-roasted chicken on top, as desired
