Pistachio Mafroukeh
Pistachio mafroukeh is a rich, much-loved Arabic dessert for Ramadan. It’s easy to make at home, decorated with nuts and served with syrup.

Ingredients
Start here, then move straight into the method.
- 2 cups pistachios (shelled)
- 1 cup powdered (confectioners') sugar
- 3 cups shredded kunafa (kataifi)
- 2 tablespoons melted butter
- 1 teaspoon green food coloring
- 1/4 to 1/2 cup sugar syrup (qatir/shira), as needed
- Qareesheh cream (curd-style cream)
- 1 liter milk
- 2 tablespoons white vinegar
- 1 tablespoon plain yogurt
- 1 tub Qaimar cream (optional)

Method
Follow the cooking sequence without leaving the page.
- Place two cups of shelled pistachios and 1 cup powdered sugar in the food processor and grind them together
- Add shredded kunafa, melted butter, and green food coloring while the machine runs, adding as needed
- Add syrup as needed until the dough becomes sticky
- Press the pistachio mafroukeh dough into the serving dish and spread ready-made or pre-prepared qashta (clotted cream) over it
- Garnish the pistachio mafroukeh with fried nuts and serve it with syrup
- How to make qashta qarisha:
- Put the milk in a pot on the heat..
- When it starts to boil.. add the vinegar and yogurt.. the milk will then curdle..
- Let it boil for two minutes, then strain it
- When the qarisha is well strained, add ready-made cream and rose water and orange blossom water and stir until the cream is uniform
- Let it cool in the refrigerator before using
