Ingredients

  • 2 cups pistachios (shelled)
  • 1 cup powdered (confectioners') sugar
  • 3 cups shredded kunafa (kataifi)
  • 2 tablespoons melted butter
  • 1 teaspoon green food coloring
  • 1/4 to 1/2 cup sugar syrup (qatir/shira), as needed
  • Qareesheh cream (curd-style cream)
  • 1 liter milk
  • 2 tablespoons white vinegar
  • 1 tablespoon plain yogurt
  • 1 tub Qaimar cream (optional)

Method

Follow the cooking sequence without leaving the page.

  1. Place two cups of shelled pistachios and 1 cup powdered sugar in the food processor and grind them together
  2. Add shredded kunafa, melted butter, and green food coloring while the machine runs, adding as needed
  3. Add syrup as needed until the dough becomes sticky
  4. Press the pistachio mafroukeh dough into the serving dish and spread ready-made or pre-prepared qashta (clotted cream) over it
  5. Garnish the pistachio mafroukeh with fried nuts and serve it with syrup
  6. How to make qashta qarisha:
  7. Put the milk in a pot on the heat..
  8. When it starts to boil.. add the vinegar and yogurt.. the milk will then curdle..
  9. Let it boil for two minutes, then strain it
  10. When the qarisha is well strained, add ready-made cream and rose water and orange blossom water and stir until the cream is uniform
  11. Let it cool in the refrigerator before using
