Zucchini and eggs sauté... a very easy and tasty recipe indeed... suitable for breakfast, lunch, and dinner too...

Ingredients

  • 1 kilo zucchini, washed
  • vegetable oil
  • 1/4 cup olive oil
  • 4 cloves garlic, crushed
  • salt to taste
  • 4 eggs
  • 1 hot pepper
  • 1 sweet pepper
  • cherry tomatoes - optional
  • 1/2 teaspoon black pepper
  • a pinch of chopped parsley

Method

  1. Wash the zucchini and trim the stem ends from both sides... then cut the zucchini into medium to large pieces
  2. Wash the zucchini again and drain well
  3. Fry the zucchini in plenty of hot oil until cooked through
  4. In another bowl... add the olive oil and sauté the crushed garlic until softened
  5. Add the fried zucchini over the garlic and stir briefly
  6. Beat the eggs separately and add them over the zucchini, then adjust the salt
  7. At this stage, also add the chopped hot and sweet peppers and the cherry tomatoes
  8. Cover the zucchini and eggs and leave over low heat for about 7 minutes, or until the eggs are cooked
    Timers: 7 min
  9. Remove the zucchini and eggs sauté from the heat and sprinkle the black pepper and parsley on top
