Ingredients

  • 1 cup coarse semolina
  • 2 cups flour
  • 1 cup ghee
  • 1/2 cup butter
  • 3 tablespoons milk powder
  • 1 medium spoon mahlab, or 1/2 spoon
  • 1/4 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 coffee cup rose water and orange blossom water mixed together
  • 1/2 cup sugar
  • Water as needed

Method

  1. For the dough: First, mix the dry ingredients, then add the ghee and butter and let it rest for a while. Then add the orange blossom water and rose water, and leave the dough for about an hour. After about an hour, knead the dough again with water, adding as much water as the dough needs.
  2. Put the dates over heat with 1 tablespoon ghee or butter and a little orange blossom water until you get a soft mixture...
  3. Spread half the dough in an oven tray greased with a little oil, then place the date mixture on top, followed by the remaining dough.
  4. When spreading the date mixture over the ma'moul dough in the tray, wet your hand with a little water so the dates do not stick to it...
  5. Place the tray of date ma'moul in the oven until it is cooked through and nicely browned.
  6. Meanwhile, prepare the date filling:
