Maamoul with Ashta

There are dozens of different maamoul recipes and fillings. This is a tried-and-tested homemade recipe for maamoul with ashta... We hope you enjoy it.

Ingredients

Start here, then move straight into the method.

  • 4 cups semolina
  • 1/2 cup all-purpose flour
  • 1/2 cup sugar
  • A pinch of mastic
  • A pinch of yeast
  • 1/2 cup ghee or melted butter
  • Orange blossom water and rose water
  • Ashta
  • 3/4 cup all-purpose flour
  • 5 cups water
  • 2 cups powdered milk
  • 1 container ashta (qaimar)
  • A small piece of butter
  • Method for the ashta

Method

Follow the cooking sequence without leaving the page.

  1. Rub the ingredients well after adding the butter or ghee (as desired).
  2. Leave the mixture for about an hour.
  3. Add 1 cup of orange blossom water and rose water to the mixture, rub them in well again, and leave for another hour.
  4. Roll out a thin layer of the dough and place the ashta filling on top.
  5. For the second layer of dough, roll it out on kitchen plastic wrap, roll it or flatten it well until even, then gently place it over the ashta layer.
  6. Place the ingredients over the heat. When the mixture starts to thicken, add a piece of butter and a plain container of ashta (qaimar), stir quickly, then turn off the heat.
  7. Maamoul with ashta needs about 20 minutes in the oven, and you must pour the syrup over it immediately after removing it from the oven and before cutting.
    Timers: 20 min
  8. When the edges turn golden, that means the maamoul tray is done on the bottom, so then turn on the top heat as well until the top is golden too.
  9. In this particular recipe, the recipe creator used a new method for making maamoul with ashta: instead of spreading it in a tray, she placed it in a muffin tin and got this shape of maamoul. This is a new idea for you to try.
