Oatmeal banana muffins made with an easy, practical recipe! They’re delicious and healthy too. Walnuts can be added optionally, but they really enhance the flavor!

Oatmeal Banana Muffins.. A tasty and healthy treat

Ingredients

Start here, then move straight into the method.

  • 1 and 3/4 cups oat flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 3 ripe bananas, mashed (the bananas should be very ripe so we can benefit from the sweetness inside them)
  • 1 teaspoon vanilla, liquid or powder
  • 1/2 cup coconut oil or vegetable oil
  • 1/4 cup honey
  • 2 eggs
  • Chopped walnuts - optional
  • Dark chocolate for topping - optional

Method

Follow the cooking sequence without leaving the page.

  1. Mix the dry ingredients together.
  2. Whisk the wet ingredients together, then add them to the dry ingredients and mix well to get the muffin batter.
  3. Pour the batter into cupcake molds (lined, or greased with oil and dusted with flour)
  4. Add a little dark chocolate shavings on top
  5. Bake the muffins in a preheated oven on the middle rack at 200°C for 20 minutes, or according to your oven’s strength

  6. Serve the oatmeal banana muffins at room temperature when cooled..
