Lazy Cake... but without eggs. Mmm—so tasty and lighter in texture ("labkeh" as they say in Lebanese). Try it and serve as a snack for the kids.

Ingredients

  • 1 cup heavy cream (for desserts)
  • 200 g dark chocolate (you can use milk chocolate or half milk/half dark chocolate to taste)
  • 1 teaspoon vanilla extract
  • a small knob of butter (about one small cube)
  • 4 packs plain biscuits

Method

  1. First, break the biscuits in a bowl.
  2. Put the liquid cream in a pot over the heat to warm well until it begins to boil.
  3. Turn off the heat and add the chocolate chopped into small pieces, stirring well until it completely melts.
  4. Add a piece of butter and the vanilla and stir until the cream and chocolate mixture is smooth and uniform.
  5. Pour the mixture over the biscuits and mix well so that the biscuit pieces absorb all the liquid mixture.
  6. When the biscuit-and-chocolate mixture cools slightly, place it on kitchen cling film or aluminum foil, shape it well and roll it into a log.
  7. Place the lazy cake in the freezer overnight to set well.
  8. For serving, take the lazy cake out of the freezer, slice it and serve.
