Ingredients

  • 4 eggs
  • 1 tablespoon vinegar
  • 2 tablespoons yogurt
  • 1/2 cup vegetable oil
  • 1/2 cup olive oil
  • 1 cup room-temperature liquid milk
  • 1 cup white halloumi cheese or as desired, cut into cubes
  • 2 tablespoons dried thyme (the kind used for making manakish)
  • 1 tablespoon oregano
  • A bunch of fresh thyme, washed, drained, and chopped or leafed
  • 2 1/2 cups sifted flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon yeast
  • 1 tablespoon powdered sugar
  • Sesame and nigella seeds for the top - optional

Method

Follow the cooking sequence without leaving the page.

  1. Whisk the eggs with 1 tablespoon vinegar, then add the yogurt and continue whisking. Add the oil and whisk again, then add the milk and whisk until the mixture is well combined
  2. Add the cubed cheese, dried thyme, fresh thyme, and oregano, and stir with a wooden spoon
  3. Add the flour, baking powder, powdered sugar, and yeast gradually, and stir with the spoon from bottom to top until everything is fully combined
  4. Pour the mixture into a pan greased with oil and dusted with flour, smooth the surface with a spoon, and gently shake the pan so the batter levels out and any air bubbles escape
  5. Sprinkle a little sesame and nigella seeds on top
  6. Let the batter rest in the pan for 10 minutes while preheating the oven

  7. Place the pan in the preheated oven at 180°C and bake on the middle rack for half an hour
  8. Check that it is cooked through before turning off the bottom heat, then turn on the top heat to brown it for 5 minutes
