Orange cake is one of the easiest and tastiest cakes. You can add a little chocolate chips or dried fruit for extra flavor.
Ingredients
- 2 1/2 cups flour
- 2 eggs
- 1 1/2 cups sugar
- 1 cup fresh orange lemon juice
- 1/2 cup oil
- 2 tablespoons white vinegar
- Zest of 1 lemon
- 1/2 teaspoon vanilla
- 1 teaspoon baking powder
- 1/2 cup coconut - optional
- Chocolate chips - optional
- Dried fruit or small pieces of figs - optional
Method
- Beat the eggs, sugar, vanilla, and lemon zest together until the sugar dissolves completely.
- Add the juice and beat, then add the oil and beat again.
- Add the flour and baking powder in batches after sifting them 3 times, and mix alternately with a spatula or wooden spoon.
- Coconut can also be added at this stage, if using, and mixed in.
- Grease a cake pan with oil or tahini and pour in the orange cake batter, then sprinkle the chocolate chips or dried fruit over the top.
- Place the cake in a preheated oven on the middle rack at 180°C for the first 15 minutes, then reduce the heat to 160°C until fully cooked. It takes about 50 minutes, or as needed depending on the oven.Timers: 15 min, 50 min
- Serve the orange cake at room temperature.
