Ingredients

- 2 cups flour
- 1 cup shredded coconut
- 1 tablespoon baking powder
- 1 teaspoon vanilla
- 2 tablespoons cornstarch
- 4 eggs
- a pinch of salt
- 1 teaspoon white vinegar
- 1 and 1/4 cups sugar
- 1 cup yogurt
- 1/2 cup vegetable oil
Method

- In a deep bowl, sift the flour with the baking powder, cornstarch, and vanilla.
- Add the shredded coconut, mix well, and set aside.
- Whisk the eggs with a pinch of salt, then add the lemon zest, vinegar, and sugar.
- Whisk the coconut cake batter well until the sugar completely dissolves, then add the yogurt and oil and whisk until you get a smooth batter.
- Add the dry ingredients to the batter in two batches and mix together...
- Pour the batter into a cake pan greased with butter and flour, and bake at 180 degrees from the bottom for 40 minutes, then brown it from the top.Timers: 40 min
