Ingredients

- 500 grams pitted dates
- 1 tablespoon baking soda
- 1 cup boiling water
- 4 eggs
- 1 teaspoon vanilla
- 1 1/2 cups sugar
- 1 cup oil
- 1 cup milk
- 3 cups flour
- 1 tablespoon anise + ground cardamom, mixed together
- 1 teaspoon baking powder
Method

- Add the baking soda to the dates, then pour the cup of boiling water over them and set aside for 10 minutes.Timers: 10 min
- Whisk the eggs with the vanilla and sugar until you get a creamy white mixture and the sugar dissolves completely.
- Gradually add the oil, continue whisking, then add the milk and whisk again.
- Mix the dry ingredients: flour, anise, cardamom, and baking powder.
- Add the dry ingredients to the creamy egg mixture and mix well using a folding motion from top to bottom.
- Mash the dates with a fork after 10 minutes of soaking in the boiling water and baking soda. Once softened, add them to the cake batter and mix.Timers: 10 min
- Grease a large cake pan with butter and pour in the date cake batter.
- Place it in a preheated oven on the middle rack and bake at a low temperature (about 160°C) until the cake is done.
