Easy Pineapple Cake
A simple homemade pineapple cake — sweet and moist. The caramel and pineapple slices on top are what make this cake so special.

Ingredients
Start here, then move straight into the method.
- 3 eggs
- 1 cup sugar
- 1 cup pineapple juice
- 1/2 cup oil
- 1 teaspoon vanilla extract
- 1 tablespoon baking powder
- 2 1/2 cups flour
- 3 tablespoons cornstarch
- pineapple slices
- Caramel
- 1 cup sugar with a splash of water
- 3 tablespoons milk
- 2 small cubes of butter

Method
Follow the cooking sequence without leaving the page.
- Whisk the eggs with the sugar and vanilla until you obtain a creamy mixture and the sugar is completely dissolved
- Add the juice and oil and whisk
- Sift the dry ingredients, then add them gradually over the mixture and whisk
- In a pot over the heat, put the sugar with water to prepare the caramel... when they turn golden, add a little liquid milk and butter... you will notice that the caramel disc solidifies when the liquid is added
- Stir gently until the caramel dissolves again
- Pour the caramel into the pan or baking dish in which we will bake the cake
- Arrange the pineapple slices over the caramel, then pour the cake batter
- Bake the cake in a preheated oven at 180°C
- Leave it on a wire rack long enough to finish cooking
- When removing the cake from the oven, invert it while still warm onto the serving plate because the caramel sticks to the pan if the cake cools
- Serve the pineapple cake when it has cooled to room temperature
