Recipe story
Maqroun dessert is one of the tastiest and easiest Arabic sweets for anyone who loves syrupy, rich desserts. Making it at home is very easy—you can prepare it yourself and it will turn out well the first time
Ingredients
- 1 cup chicken flour
- 4 cups plain white flour
- 1 teaspoon yeast
- 1 teaspoon finely ground anise
- 1 cup oil
- 2 cups lukewarm water, or as needed for the flour
- Syrup:
- 3 cups sugar
- 1 1/2 cups water
- 1 teaspoon lemon juice
Method
- Sift the chicken flour with the white flour
- Mix them with the yeast and anise, then rub in the oil, meaning add the oil and rub everything together with your hands until the dry ingredients absorb all the oil
- Gradually add the lukewarm water and knead until you get a dough that is cohesive and soft at the same time, without sticking to your hands
- Cover the dough and let it rise for about two hours
- Meanwhile, prepare the syrup so it will be cold when the maqroun is fried
- Put the sugar and water in a pot over the heat
- Once it comes to a boil, lower the heat immediately, add only 1 teaspoon of lemon juice, and let it boil for 5 minutes only because the syrup is thickTimers: 5 min
- Let it cool to room temperature
- Shape the maqroun: take a small amount, roll it out, then twist it and give it its final shape using a grater. Continue until all the dough is used
- Fry the pieces in plenty of hot oil over medium heat until they turn golden
- Remove them from the oil and drain briefly, then immediately coat them with the cold syrup at room temperature
- After one minute, remove the maqroun pieces from the syrup, drain them, and serve
