Cranberry Cookies - With Photos

A super easy and delicious cranberry cookie recipe. Make these cookies or biscuits and you can pack them in your kids' school lunch box instead of store-bought sugary desserts.

Ingredients

  • 1/2 cup dried cranberries
  • 3/4 cup sugar
  • 2 1/2 cups flour
  • 1 cup butter, chopped and cold
  • 1 teaspoon vanilla
  • Zest of a whole orange
  • 2 tablespoons orange juice
  • Sugar for decoration

Method

  1. Put the cranberries in the blender with a little sugar and pulse them coarsely so the mixture does not become smooth..
  2. Combine the flour, butter, and sugar in another bowl and mix well, then add the remaining ingredients and rub them together until a cohesive dough forms...
  3. Place the dough on a plastic bag and roll it tightly, then refrigerate for about two hours..... After the required time, remove it from the fridge, cut into rounds and dip them in granulated sugar (as shown in the accompanying photos)... After coating the cookies in sugar, bake them in a preheated oven at 180°C for 10 minutes and let them cool

  4. Be careful not to leave the cookies in the oven too long so they don't become hard
