Ingredients

  • 3 cups white or brown bulgur
  • 200 grams lean red meat for kibbeh
  • small dry onion
  • quarter of a red bell pepper
  • 6 basil leaves
  • Spices
  • quarter teaspoon black pepper
  • half teaspoon ground cumin
  • quarter teaspoon ground coriander
  • quarter teaspoon ground cloves
  • half teaspoon ground cinnamon
  • salt
  • ice - cold water
  • Meat filling
  • quarter cup oil or ghee
  • half kilo ground meat
  • large onion
  • 1 tablespoon mixed spices
  • nuts of choice

Method

Follow the cooking sequence without leaving the page.

  1. Sort the bulgur and wash it three times, then squeeze it well and set it aside while you prepare the filling.
  2. Prepare a large pan, then sauté the onion in the oil until softened. Add the meat and stir over high heat until the meat changes color.
  3. Add the spices and salt, then wait until the meat and nuts are cooked.
  4. In a food processor, place the bulgur and grind it well, then add the onion, meat, red pepper, and basil and grind again.
  5. Add a little ice-cold water to the bulgur mixture until it becomes smooth.
  6. Divide the dough into two equal parts.
  7. Grease a 40 cm tray with oil, then spread the first portion evenly in the tray and arrange the filling on top.
  8. On a sheet of parchment paper, spread the second half of the dough or flatten it in the palm of your hand, then place each piece of dough over the filling and spread it evenly, moistening your hand with water.
  9. Score or cut the dough as desired and decorate with nuts.
  10. Drizzle a little olive oil on top of the kibbeh and bake it in a 200-degree oven until the edges are golden, then brown the top.
