Easy Pineapple Upside-Down Cake

Ingredients

  • 2 cups all-purpose flour, sifted twice
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 cup pineapple juice
  • 1 teaspoon vanilla extract
  • 3 eggs (white-shelled eggs are preferred)
  • 1/2 cup oil or butter at room temperature
  • Caramel
  • 3/4 cup brown sugar
  • 100 g butter or 1/2 cup
  • Pineapple slices (fresh or canned)
  • Maraschino cherries for garnish

Method

Follow the cooking sequence without leaving the page.

  1. Start by making the caramel: melt the sugar over the heat in batches until all the sugar is dissolved
  2. Add the butter to it and stir quickly
  3. In a baking pan, place the pineapple and cherry pieces on the bottom, then pour the caramel over them
  4. Begin mixing the cake: beat the oil or butter with the sugar, vanilla, and lemon zest until the mixture turns pale
  5. Add the eggs one at a time, beating after each, then add the pineapple juice and beat
  6. Add the sifted flour with the baking powder and baking soda and beat briefly
  7. Pour the cake batter into the pan over the fruit and caramel, and put the pan into the oven
  8. Bake in a preheated oven at 180°C for 30 minutes or according to your oven's strength

  9. Let the pineapple cake cool completely at room temperature before inverting it onto a serving plate
